Spring Garden Mocktail

With the spring sunshine peeping out from behind the clouds, this vernal season why not head out into the kitchen garden and create our refreshing Spring Equinox Mocktail? 

Opening up our home-grown recipe book, grab your snips and head out into the spring sunshine to create a refreshing mocktail enhanced with garden-grown goodness. With our horticulturalists currently harvesting varieties of sweet rhubarb and aromatic rosemary out in our flourishing spring landscapes, join us back inside the kitchen as we explore how you can enjoy spring garden flavours to the fullest with our Spring Equinox Mocktail.

Ingredients (for two servings)

4 sprigs of rosemary

100ml apple juice

25ml lime juice

25ml lemon juice

50ml rhubarb syrup

50ml soda water

Ice

To garnish:

2 sprigs of rosemary

2 slices of lemon

2 slices of lime

Instructions: 

Step 1 

Firstly, begin by gathering your rhubarb and rosemary from the garden. You can now begin making your scrumptious rhubarb syrup. This can be prepared and stored within the refrigerator beforehand and is best kept contained inside an airtight jar.

Step 2 

Once you have prepared your rhubarb syrup, you can now begin creating your mocktail by combing the apple juice, lime juice, lemon juice and rosemary into a cocktail shaker, making sure to muddle firmly.

Step 3

To ensure that the rosemary infuses beautifully creating a flavoursome juice, let this mixture sit aside for 15-20 minutes and then strain.

Step 4 

Add your strained rhubarb syrup to the juice contained within the shaker, adding in a handful of ice. You can then give your mixture another generous shake to combine all the flavours.

Step 5 

Your mocktail is nearly ready! Decant your mixture into 2 sparkling crystal glasses and top your drink with a splash of soda water to add a little extra spritz.

Step 6

Garnish with a sprig of rosemary, slice of lemon and lime and now it’s time to recline back and head out into the sunshine to enjoy your zestful Spring Equinox Mocktail in style.
